Cereal supply chain economy
Objectives
To coordinate research into 1) existing and alternative supply chain management models to guarantee low acrylamide forming potential cereals (wheat, oats, maize, barley, and rye), including economic modelling and governance and cooperation incentives and 2) consumer preferences, willingness to pay for products with lower acrylamide levels and changing behaviour in preparing and consuming food.
Tasks
- To make a detailed overview of the relevant research in cereal supply chain economy and the consumer behaviour
- To draft a strategic research agenda for the field.
- To develop content for the ACRYRED training school on cereal supply chain economy and the consumer behaviour, and to identify candidates for participation in this training school.
